Cookie 5: Sumbitches


The inspiration for this cookie comes from an episode of How I Met Your Mother. The episode is when Lily meets the mother. The mother offers her a "sumbitch" cookie, a peanut butter cookie with chocolate and caramel. They are so good, that whenever someone eats one they say "Sumbitch." Sorry for all the swearing, but lets be honest, the cookies are so good they deserve the name.

I have experimented a lot with this recipe and I think I finally have it down thanks to the discovery of salted caramel morsels. I have also used crushed up Rolos and crushed Reese's Peanut Butter Cups. 

Ingredients:


1 cup (2 sticks) unsalted butter, softened
1 cup creamy peanut butter
1 cup light brown sugar
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup of salted caramel morsels 
1 cup semi-sweet chocolate chips 

Directions

  1. Preheat oven to 350 degrees F and line two baking sheets with parchment paper
  2. Beat butter, peanut butter, and sugars until creamy. 
  3. Add eggs and vanilla and beat until combined. 
  4. Sift flour, salt, and baking soda in separate bowl. 
  5. Add flour mixture 1/4 cup at a time and beat until combined. 
  6. Stir the chocolate and caramel chips in with a spatula.
  7. Scoop cookies with ice cream scoop or large spoon and drop onto sheet about 1 inch apart. 
  8. Bake 13-15 min. 
  9. NOM, NOM!
