Cookie 6: Red Velvet Chip Cookies
Every year for my mom's birthday I bake her a red velvet cake. Although this isn't her favorite cookie, (it's tomorrow's cookie, MONSTER cookies) I still consider this the Susie Cookie. I would say it is her second favorite from my 25 days of cookies. I have tried various red velvet cookies over the years and this is the one that has stuck. This cake to cookie recipe is perfect for a Holiday Cookie Swap!
Ingredients
1/2 cup of unsalted butter (softened)
1 cup granulated sugar
1 teaspoon distilled white vinegar
1 egg
1 teaspoon vanilla
2 teaspoons red food coloring
1 1/2 cups all purpose flour
2 1/2 tablespoons cocoa powder
1 teaspoon cornstarch
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup white chocolate chips
Directions
- Preheat oven to 375 degrees and line baking sheets with parchment paper.
- Beat butter and sugar until creamy.
- Add vinegar and beat until combined.
- Add vanilla and red food coloring and beat until combined.
- Add egg and beat until combined.
- In a separate bowl, sift dry ingredients (flour, cocoa powder, baking powder, corn starch, and salt). Whisk together.
- Gradually add dry ingredients to dough, 1/4 cup at a time and beat until combined.
- Add white chocolate chips and stir in with spatula.
- Scoop the dough into 1 inch balls with large spoon or ice cream scoop. Line on baking sheet about 1 inch apart.
- Bake for 9-12 minutes.
