Cookie 6: Red Velvet Chip Cookies



Every year for my mom's birthday I bake her a red velvet cake. Although this isn't her favorite cookie, (it's tomorrow's cookie, MONSTER cookies) I still consider this the Susie Cookie. I would say it is her second favorite from my 25 days of cookies. I have tried various red velvet cookies over the years and this is the one that has stuck. This cake to cookie recipe is perfect for a Holiday Cookie Swap!

Ingredients

1/2 cup of unsalted butter (softened)
1 cup granulated sugar 
1 teaspoon distilled white vinegar
1 egg
1 teaspoon vanilla
2 teaspoons red food coloring
1 1/2 cups all purpose flour
2 1/2 tablespoons cocoa powder
1 teaspoon cornstarch
3/4 teaspoon baking powder 
1/4 teaspoon salt
1 cup white chocolate chips 

Directions 

  1. Preheat oven to 375 degrees and line baking sheets with parchment paper.
  2. Beat butter and sugar until creamy. 
  3. Add vinegar and beat until combined.
  4. Add vanilla and red food coloring and beat until combined. 
  5. Add egg and beat until combined. 
  6. In a separate bowl, sift dry ingredients (flour, cocoa powder, baking powder, corn starch, and salt). Whisk together.
  7. Gradually add dry ingredients to dough, 1/4 cup at a time and beat until combined. 
  8. Add white chocolate chips and stir in with spatula. 
  9. Scoop the dough into 1 inch balls with large spoon or ice cream scoop. Line on baking sheet about 1 inch apart. 
  10. Bake for 9-12 minutes. 
  11. NOM, NOM!
