So I found pumpkin spice chips at the grocery store and the basic in me had to buy them. I used a cookie base from one of my favorite cookie recipes, butterscotch triple trip. This recipe can be found here: Butterscotch Pudding Cookies. I had to add my own touch to the recipe and of course incorporate the pumpkin spice chips:
Ingredients:
1 cup (2 sticks) of unsalted butter, at room temperature
3/4 cup of dark brown sugar
1/4 cup of granulated sugar
1 (3.4 oz) package of butterscotch instant pudding mix
2 large eggs
2 1/2 cups of All Purpose Flour
1 teaspoon baking soda
1/2 teaspoon of sea salt
1 cup pumpkin pie chips
1 cup white chocolate chips
1 cup butterscotch chips
Directions:
- Preheat the over to 350 degrees and line a baking sheet with parchment paper.
- In a medium bowl mix the dry ingredients (flour, salt, baking soda).
- Using a mixer (preferably a standing mixer) beat the butter and sugars until creamy. Next, add in the butterscotch mix while the mixer is on low. Add the eggs one at a time followed by the vanilla. Beat until creamy.
- Add the dry ingredients 1/4 cup at a time.
- Once the dough is finished, stir in the chips with a spatula.
- Use an ice cream scoop or a giant spoon to drop the cookies on the baking sheet, about an inch apart.
- Bake for 12 1/2 minutes-15, depending on your oven and your cookie preference.
