Cookie 3: S'mores Cookies
It is freezing outside! Which I love because that means snow is possible and I love the possibility of a snow day. When it is not snowing and it is just cold I am not so happy. I miss the summer. I miss campfires with s'mores. That is the inspiration for Cookie Three.
The dough I used came from this recipe- Coco Thumprints . I did make some changes to make these delicious bites of summer.
Ingredients:
Dough
1 1/2 cup all purpose flour
3/4 cup sugar, 1/4 cup to set aside for later
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter (melted)
2 large eggs
Topping
24 mini marshmellows
1/2 cup dark chocolate chips
2 tablespoons of shortening
1/4 cup of graham cracker crumbs
Directions
- Sift and whisk the dry ingredients together (flour, sugar, cocoa powder, and baking powder)
- Stir the melted butter into the mix.
- Whisk the two eggs in a small bowl and then add to the mix.
- Cover the dough and refrigerate for 30 minutes.
- Preheat oven to 325 degrees F and line baking sheets with parchment paper.
- Roll the dough into 1 inch balls and dip in the 1/4 cup of sugar that was set aside.
- Lightly flatten each ball with your fingers and make a deep 1/2-inch-wide indentation in the centers with your thumb.
- Fill each center with mini marshmallows (1-2)
- Bake for 10 minutes.
- Microwave dark chocolate chips and shortening and stir together.
- Drizzle the dark chocolate over each cookie and top with graham cracker crumbs.
