Cookie 3: S'mores Cookies



It is freezing outside! Which I love because that means snow is possible and I love the possibility of a snow day. When it is not snowing and it is just cold I am not so happy. I miss the summer. I miss campfires with s'mores. That is the inspiration for Cookie Three. 

The dough I used came from this recipe- Coco Thumprints . I did make some changes to make these delicious bites of summer. 

Recipe Only

Ingredients:

Dough

1 1/2 cup all purpose flour
3/4 cup sugar, 1/4 cup to set aside for later
1/2 cup cocoa powder 
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter (melted) 
2 large eggs

Topping

24 mini marshmellows
1/2 cup dark chocolate chips
2 tablespoons of shortening
1/4 cup of graham cracker crumbs

Directions

  1. Sift and whisk the dry ingredients together (flour, sugar, cocoa powder, and baking powder)
  2. Stir the melted butter into the mix. 
  3. Whisk the two eggs in a small bowl and then add to the mix. 
  4. Cover the dough and refrigerate for 30 minutes. 
  5. Preheat oven to 325 degrees F and line baking sheets with parchment paper.
  6. Roll the dough into 1 inch balls and dip in the 1/4 cup of sugar that was set aside. 
  7. Lightly flatten each ball with your fingers and make a deep 1/2-inch-wide indentation in the centers with your thumb. 
  8. Fill each center with mini marshmallows (1-2)
  9. Bake for 10  minutes. 
  10. Microwave dark chocolate chips and shortening and stir together.
  11. Drizzle the dark chocolate over each cookie and top with graham cracker crumbs.
  12. Nom, Nom!
